Egg White Breakfast Cups

In a cupcake tin add spinach, sliced cherry tomatoes, onion, a small amount of vegan cheese and salt and pepper to taste. Then pour egg whites into the tins, about 3/4 of the way up. Bake at 350 F for about 20 minutes. I love to put Louisiana Crystal Hot Sauce on mine!
