Mexican Inspired Omelette

Mix 3 eggs in a bowl and spray pan with coconut oil. Saute onions for a little until slightly soft. pour in eggs and then add tomato and avocado and cook at medium to low heat. As the omelette cooks a little more you can add the vegan cheese and then fold in half. Cook on that side for a little and then flip it onto the side. Season with salt, pepper and hot sauce!
