Chewy Freezer Date Balls

So, after getting home from spring break I decided to make date balls with the minimal ingredients I had in my pantry. I ended up experimenting and coming up with these freezer balls. They have more of a fudge consistency and are so delicious. I should have called them crack balls haha. This recipe is a little more time consuming but the end result is def worth the wait.

Blend in food processor

1 cup of dates (I used the dates from whole foods that you find in the fruit section)

2/3 cup of rolled oats

2 tbsp chia seeds

pinch of salt - close to 1/4 tsp

dash of cinnamon

3 tbsp freshly ground honey roasted peanut butter - from whole foods

1/4 cup of water

1/4 cup of dairy free chocolate chips

1 Collagen Peptide Packet - from Vital Proteins - (link to this product is at the bottom)

Once the dough is blended, it should be really sticky

Lay parchment paper in an 8x8 baking pan

Spread the dough on the pan and place in the freezer overnight

In the morning, the dough should be able to be rolled into balls

Keep the balls in the freezer and enjoy :)
