BROWNIES + COOKIES

GLUTEN & DAIRY FREE

Step 1: Make the Brownies

BROWNIE RECIPE (Fluffiest Brownies Ever!)

Ingredients:

  • 3 large eggs


  • 1 cup of coconut sugar


  • 1/3 cup almond flour


  • 2 tablespoons coconut flour


  • 2 tablespoons cacao powder

  • 
2 tablespoons coffee


  • 1 tsp vanilla extract


  • 1 1/4 cups of dairy-free chocolate chips

  • 
1/2 cup + 2 tbsp coconut oil (solid)

Steps:

  • In a high spend blender, blend the eggs and the sugar together (3-5 minutes) until it gets super fluffy.

  • Then add the almond flour, coconut flour, cacao powder, coffee & vanilla
    Now melt the coconut oil and the chocolate chips in the microwave

  • Then pour into the batter

  • Pour into a sprayed 8x8 pan and top with more chocolate chips

Step 2: Make the Cookies

(MY FAV CHOCOLATE CHIP COOKIES)

  • 1 cup of gluten-free 1 to 1 flour

  • 1 cup of rice flour

  • 1/2 cup of oat flour

  • 1 tsp vanilla

  • pinch of salt

  • 1/2 cup of coconut milk

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 2/3 cup of turbinado sugar

  • 2/3 cup of coconut sugar

  • 2/3 cup of melted coconut oil

  • handful of chocolate chips

  • handful of coconut flakes (optional)

  • Step 3: Combine & Bake

  • Pour the brownie batter into a sprayed baking tin

  • Take clumps of the chocolate chip cookie dough and sprinkle it on top of the brownie batter

  • Bake at 325 degrees Fahrenheit for about 30-35 minutes
