Shortbread Cookies

1 cup gluten-free 1:1 all-purpose flour

1 1/2 cup gluten-free oat flour 

1 cup plant-based butter (sticks)

1/2 cup confectioners sugar 

1 tsp vanilla 

1/2 tsp salt

1 1/2 cups chocolate chips (mix in at the end)

mix in a mixer very well. roll into logs (about 2 inches in diameter) refrigerate for about 2 hours. slice into a little less than a 1/2 an inch slices and bake at 350°F for 14-16 mins. until light brown on the bottom.
