Mango & Avocado Summer Rolls with PB Sauce

SUMMER ROLLS

Goodness wrapped up in a thin rice paper sheet. They are one of my all-time favorite snacks and light dinners. Extremely easy to make, and it is easy to devour the whole batch! I love ordering summer rolls at Asian restaurants; they are always so fresh and never leave you feeling heavy or overly full. I would say they are a nice light meal. I decided to make these with the ingredients I had in my fridge, so the contents aren’t super fancy, but you can honestly put whatever you want in them!

I opted for the mango avocado rolls! I find they pair nicely together!

So: Here is what you’ll need to make these delicious rolls

For the rolls

  • shredded carrots

  • red cabbage

  • sliced avocado

  • fresh cilantro

  • fresh mint

  • sliced mango

  • Rice paper sheets

For the PB Sauce

  • 1/3 cup of creamy PB (you might need to add 1 - 2 tsps more of PB)

  • 1/3 cup of water

  • 1/2 tsp of minced garlic

  • 2 tbsp of gluten free soy sauce

  • 2 tbsp of freshly squeezed lime juice

How to roll the rolls:

  1. Fill up a large glass bowl with warm water

  2. Have all of your ingredients chopped up and ready to go

  3. Take a sheet of rice paper and submerge in the water and massage it out until it is super soft and flimsy

  4. Then place in the rice paper on a surface (like a cutting board) and hold onto one end and place food in the rice paper and roll it up!

  5. Set aside to dry and then enjoy :)
